Delicious vegetarian Eggplant Gratin

This is our favourite recipe when we don’t have much time or don’t feel like cooking. We love to cook a delicious vegetarian eggplant gratin; this recipe is easy, tasty and vegetarian 🙂 Best of all, it’s all ready in under 30 minutes, and can be accompanied by a delicious salad. Ingredients
  1. 2 eggplants sliced diagonally
  2. 200 gr of tomato sauce (in can or fresh)
  3. 300 gr of grated Gruyère cheese
  4. basil
  5. 1 glove of garlic
  6. salt and pepper
Instructions
  1. Preheat oven to 200 degrees
  2. Brown the eggplants in olive oil for 10 minutes
  3. Meanwhile, brown the garlic, add the tomato sauce a season with a pinch of salt and pepper
  4. Let it cook for 5 minutes
  5. When the eggplants are ready, place them in a gratin dish
  6. Cover the eggplants with the tomato sauce and top them with the Swiss cheese
  7. Bake in the oven for about 20 minutes or until cheese is melted and golden
  8. Serve it with some basil on top
