Great recipe for Vegetarian Cannellonis

The other day I impressed my mom with this recipe I found on TipHero.com. It is a delicious and easy recipe to make vegetarian Cannellonis. TipHero is a great website for more vegetarian and other recipes plus they show you a video on how to make everything for the recipe, really perfect to learn how to make awesome recipes! 🙂

Ingredients
  1. 4 lasagna noodles
  2. 400gr ricotta
  3. 200 gr. shredded mozzarella (keep some for the topping)
  4. 120 gr. grated parmesan (keep some for the topping)
  5. 2 tbsp chopped fresh parsley
  6. 2 large garlic cloves, minced
  7. 250 gr. fresh spinach, cooked and thoroughly squeezed dry
  8. 1 egg
  9. 350 ml marinara tomatoes sauce (keep some for the topping)
  10. A pinch of salt and pepper
Instructions
  1. Preheat your oven at 220 degrees
  2. Cook the lasagna noodles for 10 mins
  3. Mix together the filling ingredients: ricotta, mozzarella, parmesan, garlic, parsley, 1 egg and spinach with a pinch of salt and pepper
  4. Set aside
  5. Place some marinara tomatoes sauce on the baking plate
  6. Remove the noodles and separate them when they are cool enough to handle
  7. Lay one noodle on a flat surface. Spread a spoonful of the filling evenly over the noodle, leaving a small space on the edge
  8. Roll it up and place it in the baking plate
  9. Repeat the filling and rolling process with the remaining lasagna noodles
  10. Once all of the lasagna noodles have been filled and rolled and placed in the baking pan, cover the rolls completely with the rest of the marinara sauce, mozzarella and parmesan on top.
  11. Bake them for 30 minutes.
